A proper Cumberland: coarsely cut pork with a distinctly peppery seasoning. Cook it slowly so the middle cooks through before the outside colours too far — a low oven is the easiest way.
Medium heat, 15–18 min, turning regularly. Or 190°C in the oven for 25 min, which is easier and more even.
