Crumbly Lancashire is the young one: fresh, lemony and sharp, with a texture that breaks rather than slices. The proper cheese for a Lancashire cheese and onion pie, and unbeatable with a fruit cake, which is a local tradition worth defending.
Room temperature to serve. Does not melt smoothly, so use it for crumbling and for pies rather than for cheese on toast.
