Beef kebab black garlic
Beef skewers marinated in mellow, savoury black garlic.

Cubed rump steak on skewers, marinated in aged black garlic for a sweet, deep, almost treacly savouriness that is nothing like raw garlic. It suits beef particularly well and needs very little else alongside it. Cook over a high heat, turning often, until the outside is caught and the middle is still pink. Good with rice, grilled peppers or a sharp green salad.
High heat, turn every 90 sec, 8–10 min. Pull them off while the middle is still pink — they keep cooking on the plate.
