Minced on the premises, with the fat content kept right so it stays juicy rather than drying out. Lamb mince has far more character than beef and is the foundation of moussaka, shepherd's pie, koftas and a proper keema.
Brown hard and drain the fat before adding liquid, or the finished dish will be greasy. Lamb releases more fat than beef.
125–150g per person for a keema or ragù, 175g for a shepherd's pie or moussaka.
