Our take on the American diner burger: minced beef, boldly seasoned, and shaped to hold up over a hot grill so you get a deep char on the outside and a juicy middle. Cook it over the hottest part of the coals, flip once, and melt cheese over the top. Toasted bun, pickles, burger sauce, done properly.
Get one side properly charred before you turn it. Melt the cheese on with the lid down for the last 60 seconds.
