Pork sausage with a warming chilli heat.

Chilli blended through our pork sausage for a heat that warms rather than overwhelms. Cook slowly, turning, until well coloured. Very good in a sausage casserole, on the barbecue, or simply in a bap with something cooling alongside.
Medium heat, 15–18 min, turning regularly. Or 190°C in the oven for 25 min, which is easier and more even.
