Minced beef, put through the mincer here rather than arriving in a tub. That means you can see what has gone into it. It browns properly instead of stewing in its own liquid, which is the difference between a good bolognese and a grey one. Use it for chilli, cottage pie, lasagne or meatballs.
Get the pan very hot and do not stir for the first 2 min. Brown in two batches. Drain excess fat before adding tomatoes or stock.
150-175g per person for a bolognese or chilli, 175g for a cottage pie.
